This comforting weeknight meal requires just a few ingredients and can be made entirely in your rice cooker. Minimal effort 🤝 maximum flavor.
Prep by cutting daikon into 1/2 inch quarter round pieces and slicing the ginger.
Add daikon, ginger, pork belly, shoyu, sugar, mirin, and dashi powder to rice cooker bowl.
Pour over about 1/2 cup of water.
Close and cook on mixed or regular setting until the cycle is complete.
Once it’s done, open and mix with a wooden spoon to break up larger pieces of daikon.
Plate and garnish with finely scallion and shichimi togarashi.
